I would say "Goblet of Fire" because this is when the series started getting "real" The Harry Potter series went from being a "kid" series to actually being very scary.

I actually started taking the Harry Potter books seriously and J.K. I used to mod at a HP site and all our members were sorted into houses, each house having it's own common room (sub forum) that you could only enter if you were in that house. We used to have a swap week once a year (usually Halloween) where you could join a different house and almost everyone was a Slythie for the week :D
Ha, yep - I think about it far too much. Like I gravitate towards Ravenclaw because of being a bookworm, but how would I meet Sirius if wasn't in Gryffie? :P
