I just have a general question - is there usually a different cover for US/UK editions and do collectors aim to collect all of these variations?

Also when books are signed by way of a book plate attached to the relevant book, is that a good thing, are the book plates collectable on their own?

Sorry if these questions are obvious, but I'd like to start collecting and have no knowledge whatsoever

When it comes to Limited Editions there is usually just one. Insomnia and Wizard & Glass are the exceptions where there was a different Limited Edition for the US and the UK.

Now trade editions are always different, because they are printed by different publishers. Some are very similar like the UK and US Cujo, but for the most part they are very different covers.

Not all collectors collect UK and US versions, but I think the majority of them do (I do).

No it's usually not a good thing, because like you have mentioned "are they collectible on their own?" means it could be included with any book, even though it wasn't the book it was meant for. Sorry if that doesn't make sense. Anyway, the UK Limited Editions usually always have a signed book plate, and they are not worth as much as a US Limited Edition where Kings signs his name on a Limitation page.

Default Dark Tower I: The Gunslinger

I am a total clutz at this but here goes:

Title: Dark Tower I: The Gunslinger
    Author: Stephen King
    Artist: Michael Whelan
    Publisher: Grant Books
    Publishing Year: 1982
    State: Lettered/Numbered
Comments: Currently The first edition of "The Gunslinger" is one of the most sought after books that Stephen King Has ever written. It is widely believed that there were 35 Lettered copies, but I own copy AY, so in my opinion, there must be 52 in all A-Z and AA-AZ. Also there were 500 Numbered editions, and (reportedly) 12 Publisher's Copies, 40 Author's Copies; 10 Artist's Copies and 25 or less Presentation Copies.

[Having trouble loading the images and now have to run,***I promise I'll figure it out again and will post images of Lettered, Numbered and Publisher's Copies when I get a chance...unfortunately Monday. Sorry folks.]

Dragline : Nothin'. A handful of nothin'. You stupid mullet head. He beat you with nothin'. Just like today when he kept comin' back at me - with nothin'.
Luke : Yeah, well, sometimes nothin' can be a real cool hand

    Title: The Colorado Kid
    Author: Stephen King
    Artist: Glenn Chadbourne
    Publisher: PS Publishing
    Publication Year: 2007
State: Traycased Edition 1/33 Illustrated By Artist Glenn Chadbourne. Issue price $750
Comments: Unique in that three artists were used to create decidely different artistic interpretetions of the same story. The Traycased version avoided lettering (tough to letter more than 52 copies) to issue 33 books by three artists-total 99.

    Note:
Special thanks to Shibus for these images.

Thanks for that! I've seen a few UK editions with attached bookplates and a couple with signed title pages - guess I'll go for those instead.

    Title: Christine
    Author: Stephen King
    Artist: Stephen Gervais
    Publisher: Donald M. Grant
    Publication Year: 1983
    State: 1/1,000 Issue price $65
Comments: A lettered version of 26 copies was also done. Differing only in that instead of numerals the signature sheets were lettered. An indeterminate number of Publisher's, Artists, and Author's copies were also distributed.

That is HOT!! Christine is the first King book I ever read.

How do you go about valuing books like this?

Market dictates the value. In 2005 the book was valued at $1,000.
Today the market is very soft, but the soft market hasn't hurt the older S/L books as much as more recent editions.
I'd say it still is worth more than $900.
