It's about freakin' time somebody mentioned that one. Easily one of the best soundtracks of them all.
Another really good one is Wonderland, though the movie itself creeps me the hell out.
Also, the soundtrack to Lords of Dogtown is very good, though not quite as good as the music in the documentary on which it's based Dogtown and Z Boys.
One more, the soundtrack to Basquiat (and not just because it has a great Tom Waits song on it, though that helps).
Requiem for a Dream
I love that movie soundtrack, and listen to it constantly. Clint Mansell can write some epic stuff. Check out Lux Aeterna if you haven't heard his work.

Finding Forester - which features some incredible music from the likes of Miles Davis, Ornette Coleman, Wayne Shorter, Joe Zawinul and Bill Frisell. The movie was so-so, the soundtrack is great.

I can't believe no one has mentioned Forrest Gump. A classic look at 50's,60's and 70's hits. I personally feel it's the best movie sound track.
