1 box Duncan Hines Moist Deluxe pineapple supreme cake mix
Refer to side of box for general instructions
1 20 oz. can pineapple slices IN HEAVY SYRUP (save syrup)
1.25-1.5 cups brown sugar
1 stick butter
10 maraschino cherries (halved)
Pam spray
1.5 cups buttermilk
1 TSP Rum Extract (Optional)
Preheat oven to 350 degrees with rack in center position
Spray 13"x9" Pyrex baking dish with Pam
Arrange pineapple slices on bottom of pan. (save syrup)
Arrange cherries on pan
Sprinkle brown sugar evenly over pan.
Drizzle melted butter over brown sugar.
Prepare cake mix as instructed with following modifications:
Substitute 1.5 cups of buttermilk for water.
Add remaining pineapple syrup from can.
Bake 43-46 minutes. Check closely for doneness. Not too much, nor too little. If cake jiggles in middle it may need more time.
Remove from oven, cool, enjoy. You may turn cake over by placing cooking sheet on top and flipping-gives a great presentation, but cake dries out quicker.
